In a mixer, combine gelatin and ¼ cup of water for one minute or until soft.
In a saucepan combine the other 1/4 cup of water and other ingredients.
Bring mixture to a gentle boil and when it becomes a syrup texture or
reaches 250 degrees add to gelatin in mixer.
Mix on high speed with whisk attachment for 10 minutes or until it becomes fluffy.
Pour into a parchment lined pan and let stand for 8 hours unrefrigerated.
