1/2 Box of Large Shell Noodles
1 cup Pumpkin Puree
1/4 cup Vegan Mozzarella
1 TBS Full Fat Coconut Cream
2 TBS Earth Balance Vegan Butter
1/4 tsp Salt
1/4 tsp Garlic Powder
1/2 tsp Arrowroot Powder
Prepare the pasta shells as directed.
Over low heat combine cream, butter and cheese until cheese fully melts.
Add pumpkin, seasonings and arrowroot powder, stirring occasionally.
Once warm, remove from heat and stir in coconut oil until fully combined.
Spoon the mixture into the shells and serve! Or, save to reheat later!
For an Extra Tasty Sauce Combine:
1/4 balsamic vinegar
1 tablespoon earth balance butter
Sweeten with coconut sugar to taste
3 tablespoons chopped honey roasted pecans
